It was just one of those occasions when I conjured up this strange but tasty meal in just minutes, and we now call it Spam A' la King. It is so easy to prepare that even the kids can do it.
What you will need is a can of Spam 1 small can of sliced pineapple About ½ tsp. all spice ½ cup brown sugar some maraschino cherries & some of the juice ¼ stick of margarine
Slice your Spam into about 8-10 slices, and line them into a large skillet. Open the can of pineapple slices and lay the slices around the pan, then add the juice. It is perfectly fine for the spam and pineapple to lay on top of each other. Add your margarine, cherries, and cherry juice. Next, sprinkle the entire pan of items with the all spice and then the brown sugar. Cover and simmer for about 10 minutes; then using a fork, flip the spam and pineapple over and simmer about 5 minutes more. Serve up the Spam and pineapple slices with a ready made salad of any type.
If you don't already have a salad of sorts made up, this dish also goes very well with some cooked up instant rice or even some left-over boiled potatoes, pouring the hot juices over the potatoes. I have also learned that some hefty chunks of peppers chopped up and thrown into this recipe, makes quite a tasty change and arrangement as well. Actually it's pretty neat for those of you who like that added taste and color appeal to your meals.
All total, this Spam A' la King costs only pennies to make, provided you usually have the extra ingredients around the kitchen to begin with, and it takes just minutes to make. It's quick, easy, inexpensive, and the kids will love it. Give it a try on the next meal you don't feel like spending hours in the kitchen preparing. I have even thought about trying something like this as kabobs, and roasting them over a grill. I haven't done it yet, but with summer on the doorstep, I think I just might.
