Tomato Rice - Thakkali Saadam

a rice suitable for any occassion...
Serves 6 - 7
Ingredients:
Basmati rice - 3 cups(750gms)
boiled water - 6-7cups
salt to taste
ghee - 4 tbsp
ginger-garlic paste - 1tbsp
onion - 1(big finely sliced)
green chilly - 5
cinnamon sticks - 11/2" piece
cardamom - 3 nos
clove - 5
saunf - 2 tbsp
chilly powder - 3/4tsp
turmeric powder - 1/2 tsp
coriander leaves - 1tbsp(optional)
tomato - 300gm
Method of Preparation:
Prepare tomato puree,
Boil tomatoes with little salt until its skin cracks
put the tomatoes in cold water and remove its skin and grind to a fine paste with 1tbsp of saunf and keep aside
wash basmati rice, drain and and keep aside
heat ghee in a thick bottlomed large vessel and add all the whole spices(cinnamon sticks, cardamom, clove and the remaining saunf) and fry till fragrant
add ginger-garlic paste and split greenchillies and fry till the oil separates
add finely sliced onion and stir fry till oil separates and add tomato puree and fry till the raw smell disappears
add chilly powder and turmeric powder and stir fry
once it is fried well add basmati rice and mix well for a minute
add boiled water(1 cup rice with approximately 2.25ml boiled water)
once the rice is cooked 3/4 of the required level, switch of the stove and keep the rice covered on the stove for another 5-10 mins
when it done well mix well and garnish with coriander leaves or anything of your choice
serve hot with raitha or dhal fry
Garnishing:(optional)
onion finely sliced - 1
cashews/almond - 1/2 cup
raisins - 1 tbsp
ghee - 1 tbsp
fry all the above ingredients in ghee and garnish
this rice can be used for any occassion
Note: tinned Tomato puree can be used for this rice, but its taste differs from the original
